Heat the sunflower oil in a large pot over medium heat. Add the diced onion and cook for about 5 minutes, or until soft and golden. Stir in the minced garlic and let it cook for another minute.

Add the cubed aged beef to the pot. Season with salt, pepper, and smoked paprika. Sear the beef until it gets a deep brown crust on all sides—this is where you build tons of flavour, so don’t rush it.

Pour in about three-quarters of the beef stock (reserve the rest for later). Add the bay leaves and bring everything to a gentle boil. Once it starts bubbling, reduce the heat to low, cover with a lid, and simmer for about 1 hour, or until the beef is melt-in-your-mouth tender.

Next, stir in the quartered baby potatoes. Add a little more stock if needed to keep everything just covered. Simmer uncovered for another 20 minutes, until the potatoes are soft and cooked through.

In a small bowl, mix the passata with the cornstarch and goulash paste. Stir this into the pot and cook for 5–10 more minutes, or until the sauce thickens to your liking. You can add the remaining stock at this stage if it needs loosening.
Finish with chopped fresh parsley and adjust seasoning if needed. Right before serving, sprinkle with fresh chopped parsley. Serve with traditional Romanian polenta (mamaliga)and pickled cornichions.
