A simple no-cook hummus made with canned chickpeas, fresh lemon juice, garlic, olive oil, and salt. Serve it with vegetables, pita, crackers, or your favorite toppings for an easy platter.
Put the 2 peeled garlic cloves into the food processor and pulse 5 times to chop them up.

Add the drained chickpeas, cold water, fresh lemon juice, extra virgin olive oil, and sea salt to the processor.

Blend on high speed for 60 seconds until smooth, stopping once to scrape down the sides with a spatula.
Spoon the dip into its own shallow bowl and make a small dip in the top with a spoon. Pour a little extra olive oil into the top, then sprinkle on paprika, chopped walnuts, and fresh dill.
Set the bowl of dip right in the middle of your platter or wooden board.
Cut cucumber and carrots into sticks, radishes into quarters or slices. Splash cucumbers and radishes with fresh lime juice.

Fill the rest of the board with the green olives, lime slices, crackers and pita bread triangles before serving.

Rinse and drain the chickpeas well before blending. Blend for about 1 minute before adding more water. Add extra water gradually if needed to reach your preferred consistency. Store leftovers in an airtight container in the refrigerator for 4–5 days.
