2.5cupsall-purpose flourspooned and levelled, 300g

Instructions
Dissolve Salt: Add the salt to the warm water and stir until the salt dissolves.
Make Dough (Option 1 - By Hand): In a large bowl, use a fork to combine the flour with the oil (or other fat) until it looks crumbly. Pour in almost all of the salt water and stir until a shaggy dough forms. Add a bit more water if the mixture seems dry.

Make Dough (Option 2 - Food Processor): Add the flour, oil (or fat), and salt water into a food processor. Pulse for a few seconds until the dough just comes together. Stop immediately to avoid over-mixing.
Quickly Knead & Rest (Optional): Transfer the dough to a floured work surface and knead until smooth, 2 to 3 minutes. If you have time, cover with a clean dishcloth and let the dough rest for at least 15 minutes and up to 2 hours, as this makes rolling easier. If you are short on time, you can skip the rest and proceed to the next step immediately.
Roll out the Dough: Divide the dough into 12 equally sized balls and shape them into small disks. Use a rolling pin to roll each disk into an 8-inch round. Roll them as thin as you can.
Preheat Skillet: Preheat a wide, heavy-bottomed skillet over medium-high heat for a few minutes.
Cook Tortillas: Add the first tortilla to the hot skillet. Within 20 to 30 seconds, it should start puffing up with bubbles. When the bottom has brown spots, flip it and cook the second side until browned in places and dry around the edges (1 to 2 minutes total per tortilla). Adjust the heat as needed.
Keep Warm: Transfer the cooked tortilla immediately to a dishcloth and cover it, then add some cling film also. Continue with the remaining tortillas.
