Get all the warm, spiced goodness of carrot cake in a healthy, grab-and-go bite! These easy Nut-Free Carrot Cake Energy Balls use coconut flour for a soft texture and are completely vegan and require no baking. Perfect for a quick breakfast, snack, or healthier dessert.
First, place the carrots into your food processor. Process until they are very finely shredded (they should resemble a coarse meal). Transfer the shredded carrots to a separate plate and set aside. Next, add the Medjool dates, dried apricots, and maple syrup to the food processor. Process until the dried fruit is finely chopped and the mixture becomes a sticky paste.
1 cup chopped carrots, 3 large Medjool dates, 8 dried apricots, 2 tablespoon maple syrup
Add the reserved shredded carrots, applesauce (if using), vanilla extract, rolled oats, coconut flour, cinnamon, nutmeg, and ginger to the food processor bowl with the date mixture.

Process the entire mixture until all the ingredients are fully incorporated and a sticky "dough" forms. The final texture should look like a coarse crumbly mixture. To test if it is ready, pinch a small amount between your fingers—it should easily stick together and hold its shape. If the mixture is too dry, add a small splash of water or more maple syrup and process again.
Roll the Balls: Scoop out pieces of the dough and roll them between your hands to form golf-ball-sized spheres. You should get about 16 lovely energy balls.
Coat Them: Spread the desiccated coconut on a plate. Roll each finished ball in the coconut, coating it all over. This gives them a pretty finish and extra coconut goodness!

Chill (Optional): Place your nut-free carrot cake energy balls on a plate covered with parchment paper. If you like them a bit firmer, pop them in the refrigerator for 15 minutes. Or, if you're like me and can't wait, eat them straight away!

Make sure your dates and apricots are soft. If they are hard, soak them in warm water for 5 minutes and drain well before blending.For a gluten-free option, use certified gluten-free rolled oats.Taste the mixture before rolling to adjust sweetness if desired!
