A classic apple pie filling baked between two layers of puff pastry with a hand-cut lattice top. Ready in about an hour, with no pie dough to roll from scratch.

Scatter the white sugar, brown sugar, cinnamon, nutmeg, and salt over the apples. Toss well, then set aside while the oven finishes preheating — this gives the apples time to release their juices.

Take one sheet of puff pastry and press it into the pie dish, trimming the edges to within 1 inch of the rim.

Add the cornstarch to the apple mixture and toss again until evenly coated.

Pour the apples into the pastry-lined dish, then pour in about 1 cup of the juice that's collected at the bottom of the bowl.
Roll out the second sheet of puff pastry and cut it into strips. Arrange the strips over the apples in a lattice pattern.
Trim any excess dough from the strips, then fold the overhanging edges underneath to form a thick, sealed rim.
Brush the whole top with the beaten egg.

Notes
Puff pastry must stay cold before baking; only add back 1 cup of collected apple juice, not all of it.
