Season the chicken breasts with salt, pepper, paprika, garlic powder, and thyme. Heat the olive oil in a large pan over medium heat and cook the chicken until fully cooked through, about 6–7 minutes per side depending on thickness.

Remove the chicken and shred it while still warm — a stand mixer with the paddle attachment does this quickly, or use two forks.
In the same pan, melt the butter and add the diced carrots, celery, and onion. Cook until softened, about 6–8 minutes.

Sprinkle the flour over the vegetables and stir until fully incorporated, about 1 minute. Gradually pour in the chicken broth, stirring constantly to avoid lumps.

Add the peas, corn, heavy cream, and shredded chicken. Cook over low heat, stirring occasionally, until the filling thickens and turns creamy, about 8–10 minutes. Add a splash more broth if it looks too thick.

Transfer the filling to a ceramic baking dish and spread it into an even layer and Preheat the oven to 375°F (190°C).
Roll out the puff pastry and cut it into long strips, about 1 inch (2.5 cm) wide.

Weave the strips over the filling in a braided pattern, trimming any overhang. Brush the pastry with the beaten egg. Bake for 40–45 minutes, until the pastry is deep golden and crisp.
