Start by halving the cherry tomatoes, and for the larger ones, cut them into six pieces. Toss them into a spacious bowl—this is where all the magic happens!
450 gr cherry tomatoes
Next, finely chop a red onion and dice up a bell pepper and cucumber. Cube some feta cheese (you can also crumble it if you prefer) and add all of these ingredients to the bowl with the tomatoes. Drizzle in some vinegar and olive oil, then give everything a good stir to combine the flavors.

Gently fold the ingredients together until they’re nicely mixed. If you feel it needs a little extra flavor, adjust the seasoning with salt. I usually find that the saltiness from the feta cheese is just right, but it’s always good to taste as you go!
