There's something special about baking with plums. This Kefir Plum Cake is my secret to a dessert that's both impressively delicious and surprisingly easy to make. The fruit turns out so sweet and juicy in the oven, and when paired with kefir, you get a cake that stays moist and soft with minimal effort.

This is the recipe I go back to every summer when plums are in season. The cake is light, easy to slice, and perfect with a cup of coffee or tea, and it bakes in under 60 minutes. If you've never baked with kefir before, you'll see how it makes the cake tender without being heavy. 🥧Ingredients

Pro Tip: Use room temperature eggs and kefir. They mix in more easily. This helps your cake turn out soft and smooth.
This recipe is very flexible:
- Powdered sugar on top is optional. Skip it for a less sweet dessert.
- Use any type of plums you have.
- If your plums are very tart, sprinkle them with a little sugar before baking.
- I use sunflower oil. Any mild-tasting oil works well.
♻️ Substitutions
- Swap kefir with buttermilk, crème fraiche (smantana) or plain yoghurt.
- All-Purpose Flour: For a lighter texture, cake flour is a great alternative. For a gluten-free version, a 1-to-1 gluten-free baking blend is the best substitute.
- Granulated Sugar: You can easily substitute with an equal amount of brown sugar for a deeper, caramel-like taste. Coconut sugar also works well.
- Plain Kefir: The best direct substitute is an equal amount of plain, full-fat yoghurt. Buttermilk will also work.
- Neutral Oil: Any oil with a mild taste is ideal. Avocado, canola, grapeseed, or light-tasting olive oil are all excellent choices.
- Fresh Plums: You can also use other stone fruits like apricots, nectarines, or pitted cherries.
📋 Variations
- Add sliced almonds on top before baking for crunch.
- Sprinkle cinnamon over the plums for extra aroma.
- Make it a marble cake by swirling in a spoonful of cocoa powder.

Step 1: Put the eggs and sugar in a large bowl. Beat them together with a whisk or mixer for a few minutes until the mixture is light, pale, and fluffy.

Step 2: Pour in the oil, kefir, and vanilla. Mix everything until it's smooth.

Step 3: Add the flour, baking powder, and baking soda. Gently fold everything in until you can't see dry flour anymore.

Step 4: Pour the finished batter into your pan that's lined with parchment paper. Spread it out evenly.

Step 5: Arrange the plum halves on top of the batter, cut side up. Press them down just a little.

Step 6: Bake it until the top is golden and a toothpick poked into the cake part comes out clean.

Step 7: Let the cake cool down completely in the pan.

Step 8: Dust the top with powdered sugar, slice it into pieces, and serve.

💭 Expert Tip
For an even juicier, fruit-packed dessert, try stirring a handful of diced plums right into the batter before pouring it into the pan. It adds a wonderful burst of flavour in every single bite

❓Kefir Plum Cake FAQs
You can use frozen plums for this moist plum cake. There's no need to thaw them. Simply arrange the frozen plum halves directly onto the batter. Just note that you may need to add 5-10 extra minutes to the baking time since starting from frozen will make the batter colder.
The most common reason for a dense kefir cake is overmixing the batter. Once you add the flour, mix only until the ingredients are just combined. Overmixing develops the gluten in the flour, which leads to a tougher texture. Also, ensure your baking powder and baking soda are fresh and not expired.
The role of kefir in this simple plum cake is to provide tenderness and a slight tang. The best substitute is an equal amount of plain, full-fat yoghurt or buttermilk. Both will give you a similarly moist and tender crumb.
To keep your easy plum cake moist, store any leftovers in an airtight container at room temperature for up to 2 days. For longer storage, keep it in the refrigerator for up to 5 days. You can enjoy it cold or let it come to room temperature before serving.
To make a gluten-free plum cake, simply replace the all-purpose flour with a 1-to-1 gluten-free baking blend. I've had great success with brands like Bob's Red Mill. The result will be just as delicious and moist.
