- White Vinegar & Baking Soda: These two make the cake grow tall and airy. The vinegar works with the baking soda to create lift. You won't taste it at all-it's just a secret baking helper!
- Cocoa Powder: We use a little cocoa powder to make the flour extra soft, which gives the cake its nice, smooth feel. It's not for a strong chocolate taste. I always mix it with boiling water first to help it dissolve better.
- Red Gel Food Coloring: To get that beautiful, bright red color, you must use gel coloring! Liquid colors are weak and can make your batter runny. Gel is strong, so you use less.
- Room Temperature Ingredients: This is super important! I ask you to warm up your eggs and buttermilk (take them out 30 minutes before you start). If they are cold, the batter won't mix smoothly, and the cake won't be as good.

👩🍳 How To Make Spooky Red Velvet Cake

Step 1: Make the cake batter: In a large bowl, whisk sugar, vegetable oil, and melted butter until light. Add eggs and vanilla and whisk until smooth. Pour in buttermilk, vinegar, and red gel food colouring. Whisk until fully combined and bright red.
Whisk cocoa powder with boiling water, then add to the wet mixture. Sift in flour, cornstarch, baking soda, baking powder, and salt. Gently fold until just combined; do not overmix.

Step 2: Bake and make the cheese filling: Bake the cake by pouring the batter into one pan and baking until a toothpick comes out with moist crumbs. Let it cool completely.
Whisk butter, cream cheese, vanilla, and salt until smooth, then add powdered sugar until fluffy. Chill briefly if needed before spreading.

Step 3: Assembling the Cake: Once the cake has cooled, trim any domed tops. If using one large cake, slice it horizontally into three layers. Spread frosting between each layer and stack, saving any scraps for decoration.
Cover the cake with a thin crumb coat and refrigerate for 15 minutes. Then spread the remaining frosting smoothly over the cake.

Step 4: Decorations: Slice dates, remove pits, fill with peanut butter, and cover the peanut butter with chocolate. Place face down and shape legs and antennae. Chill until set.

❓Haloween Red Velvet Cake FAQs
The most common reason is not using enough red gel food coloring or not using a high-quality gel. You need a lot of it to overpower the brown color of the cocoa powder. Add a little extra gel coloring until the batter is a vibrant red before adding the flour.
Divide the batter between three 8-inch pans as usual, or pour it all into one 8-inch or 9-inch pan if you want a single layer. Baking time may be slightly longer for the single layer, so start checking around 45 minutes. The cake will still taste delicious.
