Substitutions

Dough Substitutions:

  • Lukewarm Water: You can replace it with milk or a dairy-free alternative (like almond milk) for a softer dough. Make sure the liquid is lukewarm for proper yeast activation.
  • Sugar: Honey, maple syrup, agave syrup, or coconut sugar can work as natural sweeteners in place of regular sugar.
  • Salt: Sea salt, kosher salt, or Himalayan pink salt can be used to add a similar taste. Adjust the amount if using a coarse variety.
  • Vegetable Oil: Olive oil, coconut oil, or melted butter are great options to use instead of vegetable oil. Olive oil will give the dough an extra layer of flavor.
  • Flour: For a gluten-free pizza base, use gluten-free all-purpose flour. You can also opt for whole wheat flour for a denser, more rustic base. You may need to adjust the water amount when using whole wheat.
  • Yeast: If you don’t have yeast, you can replace it with baking powder for a quicker dough. Use about 1 tablespoon of baking powder for every 2 teaspoons of yeast.

Topping Substitutions:

  • Tomato Sauce: Pesto, garlic white sauce, or barbecue sauce are excellent alternatives to tomato sauce. Olive oil with herbs also works great as a pizza base.
  • Tuna: Cooked chicken, shrimp, or salmon can replace tuna. For a vegetarian option, consider roasted vegetables or a plant-based tuna substitute.
  • Mozzarella: You can use feta, ricotta, or a mix of parmesan and gouda instead of mozzarella. For a dairy-free version, opt for plant-based mozzarella.
  • Red Onion: Shallots, white onion, or leeks can be used instead of red onion, offering a milder or sweeter flavor. If you like, you can caramelize the onions for added sweetness.
  • Corn: Fresh or frozen corn kernels are great options to replace canned corn. Alternatively, you could use sweet peas or bell peppers for a different texture and flavor.
  • Optional Toppings (Olives, Artichoke Hearts, Peppers):
Sun-dried tomatoes, capers, or roasted red peppers are delicious substitutes for these toppings. You can also add roasted chickpeas or spinach. Fresh herbs like basil or oregano work well as finishing touches after baking.

Expert Tips

  • Quality Ingredients: Choose high-quality tuna, fresh vegetables, and flavorful cheeses for the best taste and texture.
  • Drain Tuna Thoroughly: Be sure to drain the tuna well to remove excess moisture and prevent the pizza from becoming soggy during baking.

FAQs

Opt for canned tuna packed in oil or brine for the best results. Tuna packed in oil tends to have a richer flavour, which complements the sweetness of the corn and enhances the overall taste of the pizza.

Absolutely! Fresh sweetcorn can be a great substitute for canned, adding a sweet and crunchy texture. Just make sure to cook it slightly before using it on the pizza to ensure it’s tender enough.

Yes! You can make a traditional pizza dough or use alternatives like pita bread or even filo pastry for a quicker option. For a homemade dough, ensure it’s properly prepped for a crispy texture.

To add some heat, you can sprinkle chilli flakes or add some sliced jalapeños to the toppings. Spicy olives or a drizzle of hot sauce also work well.

Ingredients

Making Dough for Two Pizzas

  • 1 cup lukewarm water 240 milliliters
  • 2 tablespoons sugar 30 milliliters
  • ½ teaspoon salt
  • 3 tablespoons vegetable oil 45 milliliters
  • 3 cups flour 360 grams
  • 2 teaspoons yeast 7 grams

Toppings

  • 1 cup tomato sauce 250 milliliters
  • 2-3 cans of tuna slightly mixed (I used 4×80 grams of Rio Mare tuna in oil)
  • 8 ounces fresh or grated mozzarella 250 grams
  • 1 large red onion or 6 green onions chopped
  • 1 can of corn
  • Optional: Olives, artichoke hearts, peppers, etc.

Instructions

To prepare the dough, follow these steps

  • Combine all ingredients in the specified order. You can use a stand mixer, bread-maker, or mix by hand. If using a bread-maker, select the dough setting, allowing it to knead and rise.
  • Alternatively, for manual kneading, gradually add water and oil to the dry ingredients. Let the dough rest and rise for 30-60 minutes, covered with cling film and a towel at room temperature.
  • Preheat the oven to its highest setting. Place a pizza stone in the oven, or use a baking tray dusted with flour or corn flour.
  • Once the dough is ready, knock the dough back by kneading it briefly, then divide into 2 balls. Cover again and leave to prove again for 1 hour.
  • Roll and stretch each ball of dough into 25-30 cm rounds to make 2 pizza bases.
  • Transfer one pizza to the pizza stone or baking tray and add your toppings: tomato sauce, tuna, red onion, sweet corn, and cheese.
  • Bake for 8 to 10 minutes or until golden and crisp.
  • Repeat the process with the remaining portion of dough.
  • Enjoy your homemade tuna pizza.

Notes

  1. Prep Ahead: Consider making the pizza dough ahead of time and storing it in the refrigerator or freezer until ready to use. This can save time on the day of cooking.
  2. Customize Toppings: Feel free to customize the toppings to suit your preferences. You can add or omit ingredients based on what you have on hand or your personal taste.
  3. Drain Toppings: Ensure that toppings like tuna and corn are drained well to prevent excess moisture from making the pizza soggy.
  4. Preheat Oven: Make sure to preheat your oven to the highest temperature possible to ensure a crispy crust.
  5. Use a Pizza Stone: For an even crispier crust, consider using a pizza stone in the oven. Preheat the stone along with the oven for best results.
  6. Watch Closely: Keep an eye on the pizza while it’s baking to prevent it from burning. Baking times may vary depending on your oven and the thickness of the crust.
  7. Let it Rest: Allow the pizza to cool for a few minutes before slicing. This allows the toppings to set and makes it easier to cut.
  8. Serve with Fresh Salad: Pair the pizza with a fresh green salad for a balanced meal.
  9. Store Leftovers: If you have any leftovers, store them in an airtight container in the refrigerator and reheat in the oven or microwave before serving.
