- Mascarpone cheese: I always let this sit out until it's at room temperature-makes it way easier to mix with the whipped cream. If it's too cold, it clumps up and turns the filling lumpy. I wouldn't use cream cheese instead-it changes both the texture and the taste.
- Heavy whipping cream (double cream in the UK): Keep this cold, right from the fridge. Cold cream whips faster and holds up nicely. You can use a hand mixer (I do sometimes), but if you've got a stand mixer, it saves time.
- Granulated sugar: No need for powdered sugar here. I just use regular granulated because it whips in well and melts fine in the syrup.
- Ladyfingers (Savoiardi): These are the base for those soft, cake-like layers. Make sure you get the crisp, dry ones-not the soft, spongy kind. I dip them quickly in the syrup-just a second or two. If they sit too long, they fall apart.
- Strawberries for the syrup (fresh or frozen): Use whichever you have. I've done both. Frozen strawberries work great-just cook them a bit longer so they break down. Fresh ones give a stronger berry taste, but honestly, both are tasty.
