100 gr butter
100 gr mozzarella
salt and pepper

Heat oven to 200C/180C fan/gas 6. Prick the potatoes with a fork, arrange on a baking tray and bake in the oven for about 1 hr 15 mins or until the skin is crisp and the middle soft.
Halve each potato lengthways, add butter, season with salt and pepper.
Add the mozzarella cheese over each potato and cover with aluminium foil.
Let them sit for 5 minutes, while the cheese is melting.
Serve on their own or with a salad.
