Step 1: Prep the Pumpkin: Slice the pumpkin in half and scoop out the seeds. Cut a grid pattern into the flesh to speed up cooking.
Step 2: Bake: Place halves on a baking sheet and roast at 375°F (190°C) for 40-45 minutes, or until tender. Once it cools, scoop out the flesh and blend.
